Roti is a popular flat, pancake-like bread usually served with curries in countries that have Indian influences in their cuisine. These rotis are buttery, tear easily and are perfect to scoop up the delicious sauce of any curry.

750 ml flour
5 ml salt
50 ml oil
enough water to form a soft dough
250 ml soft butter
vegetable oil for frying
Method
Mix the flour and salt in a large mixing bowl and add the oil.
Rub in until the mixture resembles fine breadcrumbs.
Add water and mix to a fairly soft dough.
Roll out on a floured surface into a rectangle that is about 3 mm thick and spread the butter evenly over the entire surface.
Now roll it up, place on a plate, cover with a cloth a let it rest for about 30 minutes.
Break off pieces of dough and form into balls the size of tennis balls. Roll out each ball into a disc about 2 mm thick.
Fry in hot oil for 2 minutes on each side. Serve immediately with a curry filling, or on the side to scoop up the delicious sauce of any curry.
