A pancake is a batter cake fried in a pan or on a griddle with oil or butter. Pancakes can be eaten hot or cold, and are generally filled or topped with a sweet or savoury sauce or condiment.
- 500 ml cake flour
- 2 ml baking powder
- 2 ml salt
- 2 eggs
- 600 ml milk
- 60 ml cream
- 30 ml melted butter
- oil for frying
- Combine flour, baking powder and salt.
- Beat eggs and milk until foamy.
- Gradually add flour mixture, beating constantly.
- Beat in cream, then melted butter.
- Heat a small frying pan and grease lightly with oil.
- Pour in a thin layer of batter, tilting pan to distribute it evenly.
- Fry on one side until lightly browned - about 1 minute - then turn pancake with a spatula and fry for another minute.
- Turn out onto a plate and keep warm over boiling water or, covered, in the oven at 100°C until all the batter has been used.
