Chorizo Salad

A wonderful mix of flavours including chorizo (pronounced choritho) sausage which is a dry-cured pork sausage from Spain, most commonly flavoured with garlic and paprika which gives it its characteristic red colour and smokey flavour.
- 40 ml extra virgin olive oil
- 4 chorizo sausages
- 10 ml sherry vinegar
- 1 small red onion, finely chopped
- 500 g tomatoes, chopped
- 30 ml fresh parsley, roughly chopped
- Heat a little of the olive oil in a non-stick pan and sauté the chorizo until golden.
- In a large bowl combine the rest of the oil with the vinegar. Add the onion, tomatoes, parsley and warm chorizo. Stir together well and season.
- Serve with olives or other tapas and some crusty bread.

- This German potato salad does not contain mayonnaise instead you pour a combination of hot beef broth and a lot of vinegar over it. This way you need only a couple of tablespoons of oil. The trick here is slicing the potatoes and dressing them while they are still quite hot. This allows the seasonings to penetrate before the starch on the outside cools and sets
