A wonderful mix of flavours including chorizo (pronounced choritho) sausage which is a dry-cured pork sausage from Spain, most commonly flavoured with garlic and paprika which gives it its characteristic red colour and smokey flavour.
Total Time: 10 min | Serves: 4Ingredients
40 ml extra virgin olive oil
4 chorizo sausages
10 ml sherry vinegar
1 small red onion, finely chopped
500 g tomatoes, chopped
30 ml fresh parsley, roughly chopped
Method
Heat a little of the olive oil in a non-stick pan and sauté the chorizo until golden.
In a large bowl combine the rest of the oil with the vinegar. Add the onion, tomatoes, parsley and warm chorizo. Stir together well and season.
Serve with olives or other tapas and some crusty bread.
