Milk Tart 

Milk tart is the most famous South African sweet tart. This is a really great recipe using puff or flaky pastry that can easily be doubled if you are having people over.

Makes: 2 tarts
Ingredients

Crust

500 g puff pastry OR quick flaky pastry

Filling

Method
  1. Line 2 pie plates with pastry and make a raised edge for each

  2. Add butter, salt and cinnamon stick to boiling milk

  3. Mix custard powder, cornflour and flour to a paste with cold milk then stir in a little hot milk mixture

  4. Stir this into the rest of the hot milk, add 50 ml of the sugar and bring to boil, stirring continuously

  5. Remove from the stove when it has thickened, and discard the cinnamon stick

  6. Beat egg whites until stiff but not dry

  7. Gradually beat in remaining sugar

  8. Beat egg yolks lightly and stir in a little custard mixture

  9. Stir yolks into custard mixture, then add almond essence

  10. Carefully fold in egg whites

  11. Pour into pastry cases and bake at 200°C for ±10 minutes

  12. Lower heat to 180°C and bake for a further 10-15 minutes, or until the filling has set

  13. Cool slightly and sprinkle with cinnamon sugar.
