Spice up an ordinary vinegar and use as a salad dressing with this recipe using spices and herbs.

1.5 litre vinegar
1 cinnamon stick
10 cloves
10 ml chopped pimento
10 ml peppercorns
15 ml mustard seeds
3 bay leaves
2 sprigs fresh rosemary
Method
Place all ingredients except rosemary in a saucepan and heat to just under boiling point. Remove from stove and leave, covered, in a cool space overnight. Strain and bottle, adding a sprig of fresh rosemary to each bottle.
