An unusual soup from the indigenous folk of KwaZulu-Natal, made from sweet potato, tomato, mixed vegetables, chicken stock, mixed herbs and garnished with slices of red bell pepper.
Total Time: ± 1 hr. | Serves: 4Ingredients
500 g sweet potatoes
1½ medium-sized tomatoes
25 ml vegetable oil
100 g mixed vegetables
5 ml mixed herbs
salt to taste
parsley
red bell pepper to garnish
Method
Cook sweet potato.
Skin and mash cooked sweet potato.
Dice tomatoes.
Heat the oil in a saucepan, add diced tomato and simmer for 15 minutes.
Add the sweet potatoes, mixed vegetables, mixed herbs, stock and salt.
Cover and simmer for 20 minutes.
Remove from the heat and add parsley.
Garnish with bell pepper slices and serve hot.
