Quick and easy to make this blueberry pecan loaf is delicious and ideal for a tea time treat.
Prep Time: 25 min | Bake Time: 65-70 min | Makes: 1 loafIngredients
250 g plain flour
10 ml baking powder
2 ml salt
1 ml bicarbonate of soda
1 ml ground nutmeg
125 g sugar
60 g pecan nuts, chopped
2 eggs
60 ml milk
125 ml orange juice
10 ml grated orange zest
90 g butter, melted
155 g blueberries
Method
Preheat oven to 180°C. In a large bowl combine flour, baking powder, salt, bicarbonate of soda, nutmeg and sugar. Mix in pecan nuts. Make a well in the centre.
In a medium bowl, beat eggs with milk, orange juice and zest. Fold in melted butter. Add egg mixture to flour mixture, mixing until just combined. Gently fold in blueberries.
Pour batter into a well greased 20 x 10 cm loaf tin. Bake for 55 to 65 minutes until loaf is golden and risen. Cool in tin for 10 minutes. Turn onto a wire rack to cool.
