Southern Fried Chicken

Ingredients
vegetable oil
1 kg chicken pieces
200 g flour
5 ml salt
1 ml pepper
Gravy
30 ml butter
25 g flour
salt and pepper to taste
250 ml milk
250 ml hot water
Method
Pour the vegetable oil into a deep frying pan until it is 5 cm deep — alternatively you can use a deep fryer
Combine flour, salt and pepper
Roll each piece of chicken in the flour
Once coated place the pieces into the hot oil
Cook for about 30-35 minutes turning once, as the oil should be deep enough to cover the pieces
Gravy
Heat a saucepan and add about 30 ml of the oil from the frying pan
Add the butter and flour — blend and cook until golden brown
Gradually stir in milk and hot water — stir until smooth and thickened
Add salt and black pepper
