Pumpkin flowers are delicious fried in a little butter or cooking oil, or dipped into batter and then fried. They can also be added to fish and meat dishes.
Serves: 4Ingredients
20 large pumpkin flowers
1 fresh fish
1 medium onion
1 large tomato
15 ml cooking oil
125 ml water OR stock
salt and pepper to taste
Method
Clean the fish, remove all the bones and skin. Cut the fish into small pieces.
Peel and chop the onion. Wash and finely slice the tomato.
Remove the centres and stem from the pumpkin flowers. Wash the remaining flower petals well.
Heat cooking oil in a frying pan. Add the onion and cook until golden brown.
Add the tomato. When cooked add fish and cook for about 10 minutes.
Add the water or stock. When mixture begins to boil, add the pumpkin flowers and season with salt and pepper.
Serve hot.
