Hors d’oeuvres as the start to a meal is a modern development, having its origin in the Scandinavian countries. This delicious appetiser made with pickled herring and Granny Smith apples is quick to make and an ideal hors d’oeuvre for lazy summer days.

Prep Time: 10 min | Serves: 6
Ingredients
  • 12 pickled herring fillets

  • 3 large Granny Smith apples, cored and thinly sliced

  • 1 English cucumber, thinly sliced

  • 1 leek, thinly sliced

  • 250 ml plain yogurt

  • 1 ml freshly ground black pepper

  • 5 ml chopped chives

Method

Arrange herring fillets and apple slices in a serving dish. Add cucumber and leek slices and top with yogurt. Season with black pepper and chives.
