Mention pâté, and what comes to mind first, expensive gourmet duck liver or chopped liver? Both are correct, of course, but pâté is not limited to poultry. Pâté is simply a mixture of seasoned ground seafood, meat or vegetables, and often a combination of several different base ingredients. Crayfish  or lobster is a delicious candidate for pâté.

Prep Time: 10 min | Yields: ± 250 ml
Ingredients
  • 250 g cooked crayfish meat

  • 12.5 ml finely grated onion

  • 50 ml thick cream

  • 50 ml butter

  • 5 ml lemon juice

  • 1 ml curry powder 

  • pinch chilli powder

  • sprinkling ground black pepper

Method

Chop cooked crayfish meat finely and blend well with all other ingredients. Chill before serving.

Tips
  1. Use lobster if you cannot get crayfish.

  2. Although yellow margarine may be used, pâté made with butter will be firmer and have a better flavour.
