This pâté-like spread is also known as snoek  paste or snoek sambal and is delicious served on freshly baked bread.

Ingredients
  • 1 kg dried snoek

  • 1 clove garlic

  • 1 green chilli

  • 100 g butter

  • 30 ml lemon juice

Method

Remove bones from snoek and flake. Place food processor and add garlic, chilli and butter. Process until smooth. Add lemon juice with the blade running. Spoon into a small glass bowl and serve.
