Omelettes are very versatile, you can serve them plain, with herbs, with cheese or as a light summer lunch filled with seasonal fruit.
Cook Time: 5 min | Serves: 1Ingredients
2 eggs
15 ml milk OR water
15 ml butter
salt and pepper to taste
fresh herbs of your choice
Method
Beat eggs with milk. Add salt and pepper. Heat butter in a small frying pan. Pour in beaten egg, add herbs, and cook until set. Loosen omelette from sides and bottom with a spatula and serve, open or folded.
Variations
Cheese omelette: Add 125 ml grated Chedder cheese.
Fruit omelette: Serve omelette with a filling of freshly chopped apple, strawberries, cherries or pineapple. Dust with icing sugar before serving.
