Herb Omelette 

Omelettes are very versatile, you can serve them plain, with herbs, with cheese or as a light summer lunch filled with seasonal fruit.

Cook Time: 5 min | Serves: 1
Ingredients
  • 2 eggs

  • 15 ml milk OR water

  • 15 ml butter

  • salt and pepper to taste

  • fresh herbs of your choice

Method

Beat eggs with milk. Add salt and pepper. Heat butter in a small frying pan. Pour in beaten egg, add herbs, and cook until set. Loosen omelette from sides and bottom with a spatula and serve, open or folded.

Variations
  1. Cheese omelette: Add 125 ml grated Chedder cheese.

  2. Fruit omelette: Serve omelette with a filling of freshly chopped apple, strawberries, cherries or pineapple. Dust with icing sugar before serving.
