Milk tart is the most famous South African sweet tart. This is a really great recipe using puff or flaky pastry that can easily be doubled if you are having people over.
Bake Time: 20-25 min | Makes: 2 tartsIngredients
Crust
500 g puff OR quick flaky pastry
Filling
7 ml butter
1 ml salt
1 stick cinnamon
750 ml boiling milk
10 ml custard powder
15 ml cornflour
15 ml cake flour
25 ml cold milk
125 ml white sugar
4 large eggs separated
2 ml almond essence
Method
Line 2 pie plates with pastry and make a raised edge for each. Add butter, salt and cinnamon stick to boiling milk. Mix custard custard powder, cornflour and flour to a paste with cold milk. Stir in a little hot milk mixture. Stir this into hot milk, add 50 ml of the sugar and bring to boil, stirring continuously. Remove from the stove when it has thickened, and discard the cinnamon stick. Beat egg whites until stiff but not dry. Gradually beat in remaining sugar. Beat egg yolks lightly and stir in a little custard mixture. Stir yolks into custard mixture, then add almond essence. Carefully fold in egg whites. Pour into pastry cases and bake at 200°C for ±10 minutes. Lower heat to 180°C and bake for a further 10-15 minutes, or until the filling has set. Cool slightly and sprinkle with cinnamon sugar.
